Let’s Taco Bout It!
I’ve come up with a super simple, insanely yummy Cinco de Mayo Fiesta with a full make-ahead menu that will have all of your guests talking! You can just call me your BFF now because this girl has taken all the guess-work out of this perfect Mexican Fiesta dinner. Everything I’m about to give you (the full burrito…hahahahaha…sorry, I couldn’t help myself) can be made in advance. This is GREAT news because now you can pre-make everything before your party begins and then sit back and relax as your guests come rolling in! No party to go to, no problem! This menu is great for lunch or dinner anytime, 365 days a year! Without doubt, you’re not going to want to pass on this one, my amiga…It’s a guaranteed winner!
The Break Down
To keep things easy I’ve broken this full make-ahead dinner into 2 separate posts. This post includes the main menu and dessert. The second post will include your sides, and of course, the most deliciously spicy margarita you’ve ever had! It’s true, people are RAVING about this delicious concoction!
The Main Menu + Dessert

The Grande Plan:
I’m providing you with 6 out of the 10 very simple recipes today. Each recipe will have a “Make-Ahead” sidebar. Lucky for all of us, this year’s Cinco de Mayo falls on a Saturday. Therefore, you can begin making certain items as early as today. The last 4 recipes (Grilled Chili & Lime Corn, Bacon & Tabasco Oysters, Ahi Mango Ceviche, and the Spicy Cucumber Margaritas) will be sent to you on Friday. Don’t fret! The last 4 don’t require much work. In fact, you can prep the corn and margs Friday night and they will be great for Saturday’s celebration! The oysters and ahi should be purchased the day you plan on eating them. Granted, the oysters are broiled for 6 minutes, however, I still recommend you buy raw seafood the same day you plan on eating it.
Fiesta In Style
Of course, no party is complete without fabulous party decorations! To start, my table is layered with a multicolored striped table-cloth I purchased years ago and a natural table runner from Pottery Barn. I styled my table with 3 potted cypress mini trees and 5 fresh arrangements including peonies, daffodils, tulips, red roses and daisies in glass canning jars. To stay within the theme’s origin, I added these adorable tiny faux cactus from Michael’s craft store. In addition, I decorated my table with a couple of larger faux cactus from Pottery Barn. My white plates and gold flatware are from Pottery Barn. And last, my margarita glasses were purchased for my little bambino’s baby shower back in 2004! 🙂
