Green Means Go!
Life’s resurgence is here and its marking its presence with the color green! My tulips are already sprouting. Soon our dormant trees will begin budding in the most amazing neon green on Earth’s existence. This vital reawakening is so consuming that I could swear my veins are pumping green. The power of the sun and its vibrancy of new beginnings has me excited to push the reset button. I am ready! Today I am hitting the ground running and I have an energy so strong that no one is stopping me! Who’s felling lucky? Who wants on this train? Green means go!
In celebration of our pesky little green visitor I’m sharing my “Leprechaun Juice” recipe. I laugh when I remember back to how I used to tell my kids that this “super food” juice has the ability to turn anyone into a “superhero”. Ha! What we do to get our kids to eat their veggies! Now that they are in their teens these little phrases of encouragement don’t work as well, but luckily for me, they don’t need it. It’s one of the only juices that my kids (and husband) actually like because it doesn’t taste like a liquid salad. Filled with all things good, (like vitamins A, K and C, fiber, calcium, iron, and more) this is a juice that screams effervescence! It’s bright green color and mild sweet taste is delicious and will keeping everyone asking for another serving of fresh veggies, please! Best yet, make a large batch ahead of time and keep refrigerated for later. Just stir and serve over ice.
Using a high-powered blender, toss in the ingredients below and blend until smooth. Serve over ice!
- 1 cup frozen pineapple
- 1/4 cup fresh mint, packed full
- 1 cup kale and spinach mix, packed full
- I kiwi, peeled
- 2 cups cold water
