I’ve been on a quest to find the pot of gold at the end of the rainbow since I was in pre-school. Blankety-blank years later (LOL) I am beginning to think someone might have told me a little fib including a pesky tiny green man with a long red shaggy beard. Nonetheless, the adorable myth has played a huge part in the love I have for those beautiful colored arches spanning the length of the sky that we call a “rainbow”!!!
Rainbows symbolize so many wonderful things: promise, hope, new beginnings, magic, beauty, enlightenment, and good luck. If I could share with you the secret to finding the pot of gold at the end of the rainbow I would, but instead I am sharing a close second, my Rainbow Marshmallow Treats. These little yummy gooey squares are perfect for almost any celebration. After a long and cold snowy winter, where I have eaten my way through heavy crème brûlées, pecan pies, and cheesecakes, this dessert sings happy songs of spring, sunshine and brilliant color. I love to bring out this easy no-bake marshmallow yumminess just in time for a St. Patrick’s Day surprise. Your kids will love you for it!
- 20 oz. bag of mini marshmallows
- Family-size box of Trix cereal
- 6 tablespoons of butter
Melt butter over medium-low heat. Add marshmallows and stir until completely melted. Remove from heat and add cereal. Mix until well coated and dump into 13 x 9 inch pan coated with cooking spray or butter. Once cool, cut and serve!
