Tis the season for yummy salads made with garden fresh goodies! One of our favorite spring/summer salads is a Cobb. A traditional Cobb salad is made with grilled chicken and blue cheese dressing, but in this recipe I decided to step it up! I substituted chicken for shrimp and paired the salad with a delicious creamy avocado dressing. TIP! Get creative with your meat replacement and try substituting in flank steak, salmon, or lobster.
